Enzymes have been used for many years in baking applications, but they can also be used in a host of other food and beverage processing industries including protein processing, cheese and whey production, and brewing. PROTEIN PROCESSING
BIO-CAT carries an array of proteases to help with your protein processing needs. We have exo-proteases (breaks peptide bonds on the ends of amino acid chains) and endo-proteases (breaks peptide bonds within amino acid chains), as well as peptidase preparations. Whether necessary for the production of flavors, animal feed, fertilizers, or any other protein processing application, we have the enzymes and knowledge to help.
CHEESE AND WHEY
Cheese production has always been an enzymatically driven process. Enzymes are responsible for curdling the milk and production of the aged flavors during the ripening process. BIO-CAT carries many enzymes to help with the production of cheeses and cheese flavors. We have proteases and lipases for flavor production as well as enzymes for removing spore-forming bacteria from cheese curds and for removing peroxides used as chemical sterilants. BIO-CAT also has lactase for the production of hydrolyzed whey syrup.
BREWING
Like cheese production, brewing has also always been an enzymatically driven process. Endogenous enzymes in the malted barley convert starch to fermentable sugars which are utilized to produce alcohol. Enzymes can be added to improve this starch conversion in some barley malts. BIO-CAT carries these enzymes as well as enzymes to remove “chill haze”, help with adjunct brewing, and help improve filtration.
